Strawberry Tibetan Goji Berry Smoothie

Why not make one of the best vacation drinks around just a little better with the addition of goji berries? Serve with a wedge of lime, a straw, and good company. (For a non-alcoholic version simply omit the tequila – still absolutely delicious!)

INGREDIENTS

1 Fresh Young Coconut
1 Cup Strawberries chopped into small pieces
2 Tablespoons Agave
¼ Cup soaked Wild Tibetan Goji Berries

DIRECTIONS

1. Carefully scrape the coconut flesh and pour the coconut water into a bowl, taking out all splinters and fibers. If you do not have access to fresh young coconuts, you may also use almond milk.

2.Pour into the blender and add all the rest of the ingredients and blend to desired consistency.
